Octopus

Octopus is prized across the Mediterranean and is considered a real delicacy. Not easily attained from most supermarkets and more expensive than lobster, octopus is marvelled by top chefs across the country. A versatile ingredient that will take on flavours from the herbs and spices it’s cooked with. It’s low fat and high in protein, making it an excellent and nutritious addition to your offerings. The freezing process of the octopus benefits the end quality of the meat. Whilst the octopus is thawing, the meat is tenderised, leaving you with a fresher, more succulent product to work with.

Octopus tentacles are a favourite on any Mediterranean menu. Delicious fried or sliced into salads; one of the most popular ways to cook an octopus is on the grill. This helps add extra flavour and texture. Make sure the tentacles you’re using have been pre-cooked or else you’ll need to boil them before grilling. This is to make the tough connective tissue collagen in its muscles melt into soft gelatine. Once they’re ready to grill, soak the tentacles in olive oil and sprinkle with salt and pepper before adding them to a preheated grill. Serve whole or dice into cubes to add to a curry, risotto or kebab.
